Floating Snowballs

Ingredients: 1 egg yolk for 2 servings, 1-2 teaspoon/s of sugar per egg, 25 ml of champagne or white wine or port (or any sweet wine) or fruit juice

Preparation: Beat the egg yolk and the sugar until creamy, then add champagne dropwise.

The beating of the egg yolk is usually done over a hot water-bath, which makes the egg yolk cream firmer. Making this dish purely raw works out fine and the preparation is quicker.
